
Ingredients:
- 2 garnet yams
- 1 tbsp vegetable oil
- 1 tbsp coarse sea salt
- 1/2 cup butter softened
- 3 tbsp The Maple Guild maple syrup
- 1 chipotle Chile in adobo sauce
- 1 tsp salt
- 6 bacon slices, cooked until crispy, then crumbled or chopped
- 1 brunch green onions, sliced
Maple Chipotle Butter Sweet Potatoes

- Set oven to 375° F
- Prick yams with fork all over
- Rub with oil and sea salt
- Wrap in foil and place in oven for 45 minutes or until tender
- Meanwhile, Place butter, maple syrup, chipotle pepper and salt in food processor and pulse until combined
- When yams are cooked, allow to cool slightly
- Cut in half and scoop out flesh (reserve skins), mash with butter mixture and place sweet potato mixture back into the skins
- Top with crumbled bacon and scallions
