Maple Chipotle Butter Sweet Potatoes

  • Set oven to 375° F
  • Prick yams with fork all over
  • Rub with oil and sea salt
  • Wrap in foil and place in oven for 45 minutes or until tender
  • Meanwhile, Place butter, maple syrup, chipotle pepper and salt in food processor and pulse until combined
  • When yams are cooked, allow to cool slightly
  • Cut in half and scoop out flesh (reserve skins), mash with butter mixture and place sweet potato mixture back into the skins
  • Top with crumbled bacon and scallions
